Sweltering today – summer is definitely here and while I don’t want to whinge at all about that I must admit that this year I am wishing it was cooler. With a stomach that’s growing by the day, my body is just not appreciating the heat and I find I may even be getting slightly jealous of those in the northern hemispheres and their chilly winters! It also means that salads are the staple foods of choice. One of my favourites is a poached chicken salad. Poaching a whole chicken is so easy and it can stretch to several meals. Pull the cooked meat off the bone and shred then add anything fresh you have in the fridge – salad greens, steamed or roasted sweet potatoes, torn herbs, tomato, cucumber – plus either a good dosing of olive oil and dash of balsamic or a dressing made with mayonnaise, yogurt or sour cream and a bit of seeded mustard. No recipe required – just throw things in you like and taste good together!
