My fridge is full of rocky road and that can only mean one thing.......less than 2 weeks until Christmas! To quantify that, one whole shelf of my fridge is taken up by rocky road (the dangerous mixture comprising over 2kgs of chocolate, marshmallows and various other sinful treats), another shelf is occupied by a huge pile of gingerbread dough (yet to be rolled and cut into stars, trees etc for baking), the shelf below that is taken up by a large jar or fruit mince mixture (actually that has been marinating there for weeks, being turned daily) ready to fill the pasty sitting beside it when that is rolled and cut out for mince pies. My freezer is also taken up by rounds of parmesan and rosemary biscuit mixture also destined for the oven............guess what everyone is getting for Christmas! Too bad is has been too hot here to actually put on the oven and do any of the baking - so I am waiting for hopefully a cooler day to get that done. For me these things are essential parts of Christmas - along with the cases of mangoes, boxes of cherries, sides of smoked salmon, fresh market salads.....swims at the beach.......One year I will have to experience a white christmas but for now I am certainly not complaining!! I love where I live and love being home especially when for so much of the year I have a busy travel schedule on the other side of the world. Oh, yes I am managing to squeeze in a little training in between the busy cooking schedule - but the important things come first - like sorting out the Christmas lunch menu - will post more on that another day.
