Its been busy here - the house is full (of family) and the fridge even more full and in between the cooking and shopping I have also been logging some solid training. Traditionally for me Christmas day has started with a long run but tomorrow I am breaking this tradition and heading out for a ride before breakfast with a beach swim and a light run in the afternoon. In between I am really looking forward to eating some great food with my family and some quality sitting-down-doing-nothing time. And thankfully I have already done much of the preparation and cooking - since it is likely to be pretty hot almost all of what we will be eating will be cold - so the salmon gravlax is curing itself in the fridge; the octopus terrine is setting as is the verjuice and avocado salad; the 'trifle' which has been a multi-day affair is waiting for yet another layer to set before another is poured on top (the layers are passionfruit posset; a champagne, mango and passionfruit jelly; a coconut sago layer; and a fresh mango, pineapple and passionfuit layer to top it off. So tomorrow is looking pretty easy - lots of salads to make and the fresh mince pies to bake (and yes I will finally be eating some of those). The panettone was baked last night and we have already made some head-way into that - the rest will be breakfast toasted and served with some home-made passionfruit butter, fresh blueberries and creme fraiche. And mum's Christmas cake will also get a start (in fact most of that has already been demolished so luckily she has made a back-up Along with the standard every-day muesli and fruit salad. Sounds like an eating marathon tomorrow so I had better get some rest!!! Seems like this athlete blog has turned into a food blog - but hey its Christmas and the kitchen happenings are more exciting than the off season training happenings at this time of year anyway!!
