31 May 2013: Recipe - Coconut lime cake

Another cake recipe! This time for a coconut lime cake. Its gluten and grain free, also dairy free and uses just a little maple syrup as the sweetener. The rest of the sweetness comes from the coconut cream, oil and flour. The lime makes it fresh and zingy - for me I love lime desserts to have quite a lot of lime so I think this cake is perfect. It super easy to make too so you can throw it togther and in the oven and be eating it warm in less than 40 minutes. It is actually really nice served cold too from the fridge - the lime flavour and the moistness of the cake stands up to the chilling and I really like the texture when chilled. Loving thin slices served with poached quinces. 2 limes - both juice and zest

1/3 cup almond flour

1/3 cup maple syrup

1/4 cup coconut oil (liquid)

1/3 cup coconut cream

4 eggs - lightly beaten

1/4 cup tapioca flour

2/3 cup coconut flour

1 tsp baking powder

Heat oven to 180 degrees C. Prepare a loaf pan by lining with baking paper.

Mix all ingredients together until batter is smooth. Pour into loaf pan and bake for 30-40 mins or until golden and cooked through when tested with a skewer.
